Banana, Saffron & Rose High Protein Nice Cream

If you know me, you'll know I don't believe healthy eating should ever feel restrictive. I'm always looking for ways to recreate my favourite sweet snacks using whole food ingredients that actually nourish my body, skin, brain and hormones.

Obviously I had to bring my Persian twang and add all my favourite flavours, especially saffron.

This has been one of my go-to summer desserts recently. It's naturally sweet, creamy, packed with goodness and honestly tastes like something you'd order from a café (maybe ours soon 👀).

The best part? It takes less than 10 minutes to prepare and has almost 10g of protein per serving.

RECIPE

Serves: 4

Ingredients

  • 2 medium ripe bananas (240g), sliced and frozen
  • 200g 5% Greek yoghurt
  • 1 tsp vanilla extract
  • 1 tsp raw honey
  • Pinch of saffron threads
  • Splash of rose water

Toppings

  • 15g pistachios, roughly chopped
  • ( optional ) 10g cacao nibs an a sprinkle of dried rose petals
  • Pinch of sea salt
  • If you like it sweeter, a drizzle of raw honey

Method

  1. Slice your bananas and freeze them overnight (or until completely frozen).
  2. Add the frozen bananas, Greek yoghurt, vanilla extract, raw honey and saffron to a food processor or high-speed blender.
  3. Blend until thick, smooth and creamy. You might need to stop and scrape the sides down once or twice, but avoid adding liquid if you can, the thicker, the better.
  4. Place chopped pistachios on top and mix in while adding more on top to finish.
  5. Place into the freezer to harden into ice cream, freeze for desired softness (I did 2 hours)
  6. Scoop your portion into a bowl, finish with toppings of choice and enjoy!

WHY I LOVE THIS RECIPE

Whenever I'm creating recipes, I always ask myself one question...

How can I make this taste amazing while giving my body something back?

Bananas make it naturally sweet and give it that ice cream texture without needing cream.

Greek yoghurt adds creaminess, calcium and protein.

Saffron isn't just there because it's pretty. It's one of my favourite ingredients because it's naturally rich in antioxidant peptides + compounds like crocin and crocetin, which have been studied for their role in supporting mood, brain health and protecting our cells from oxidative stress.

Pistachios bring healthy fats, plant protein and polyphenols, while cacao nibs add crunch and are naturally packed with flavanols + magnesium.

It's one of those desserts that genuinely feels indulgent, but leaves you feeling good afterwards too.
