FROM OUR FORMULATIONS TO OUR CAFE RECIPES
- by Teresa Pessina

At eyeam, we’ve always cared about what goes into our formulations. Our café brings that same curiosity to what goes into your cup and onto your plate.
Expert Co-founder Pharmacist and Formulator Margo formulates all our products and makes them with her team in London..
But her daughter, Holistic Nutritional Practioner Roxy took reigns over the cafe with formulating everything not only with the best taste, but the highest level of nutrients and bio-availability.
Think saffron-infused coffee, raw honey whipped into espresso, high-polyphenol olive oil stirred into matcha, and fresh herbs picked from the hydroponic wall beside you.
Food should be nourishing, delicious and something you look forward to. Here’s a little of the thinking behind our menu.
Everything is organic, whole foods, locally sourced and the best quality you can find.
You’ll find saffron throughout the menu, from our Honey Whipped Negin Saffron Espresso to Saffron Water and the Peptide smoothie.
We love its delicate flavour, beautiful colour and the research surrounding it. A clinical trial found improvements in mood and some stress-related symptoms with a specific daily dose of standardised saffron extract over four weeks. Those results explain why this ingredient interests us so much.
AND there are studies to show that Saffron contains natural antioxidant pepties. Saffron stigmas contain two primary antioxidant peptides—DGGSDYLGK and VDPYFNK—identified through proteomic analysis.
For our birthday month, we’ve also created The No Stress Saffron Latte: organic coffee, saffron-infused unhomogenised milk and our No Stress Drops. A golden addition to your usual coffee ritual.
You can find Saffron also in our DAILY NOTOX SPF for an antioxidant peptide boost.

Our Honey Whipped Espresso pairs coffee with raw organic pine honey for a fluffy, naturally sweet finish.
Honey contains naturally occurring phenolic compounds, with its composition varying according to its botanical origin and processing. That makes it an interesting ingredient, although its antioxidant activity in a laboratory doesn’t establish a health benefit from a spoonful in your coffee. PubMed
We choose it for its rich flavour and the way it brings our recipes together. It still contributes sugar, so a little goes a long way.

Olive oil belongs in more places than you might expect.
Our menu brings it into matcha, smoothies, yoghurt bowls, cacao mousse and colourful savoury dishes. It adds a silky texture, a little peppery depth and another layer of flavour.
Olive oil provides unsaturated fat, which can form part of a balanced diet. Replacing some saturated fat with unsaturated fat can help lower cholesterol. nhs.uk
We choose a high-polyphenol extra virgin olive oil with 1000mg of polyphenols because we care about the character and composition of the ingredients we use. The therapeutic level is 250g polyphenol, most in the supermarket don't even reach 150. The more kick it has, the more polyphenols.
Try our High-Polyphenol Olive Oil Matcha if you’re curious.
And if you're feeling really crazy, get our HP Olive Oil Shot!

Our organic matcha and hojicha is sourced from small farms in Japan, selected for its vibrant colour and smooth, earthy flavour. Enjoy it as a latte, a Matchacano or with coconut water.
Green tea naturally contains caffeine, amino acids and polyphenols. These compounds help explain the interest in tea, although a cup shouldn’t come with promises of weight loss or disease prevention. NCCIH
And our cacao is a raw organic blend sourced from France.
For something richer, there’s our Raw Ceremonial Salted Cacao Hot Chocolate, Orange Mocha Flat White or Good Mood Cacao Protein Mousse.
The high protein mousse combines silken tofu, dark cacao, raw honey, olive oil and sea buckthorn oil, finished with pomegranate seeds and raspberries. Creamy, chocolatey and full of ingredients we love.

Each smoothie has its own personality.
Peptide brings together avocado, Medjool date, saffron, cacao nibs, sea buckthorn, pomegranate, resveratrol extract (the same one we use in our Hormone Check Drops, Inflammaging Solution and SPF NOTOX, collagen peptides and olive oil, with a pomegranate coconut yoghurt glaze.
Lymphatic Hydration is our fresh green blend: spinach, kale, parsley, mint, avocado, apple, banana, lime, ginger, fennel, chlorophyll and coconut water. We pair the avocado and kale for better absorption of Vitamin K.
Performance combines banana, almond butter, your choice of milk, green coffee, herbs and protein powder, finished with Greek yoghurt.
All done with our without protein powder.
These are recipes built around flavour, variety and nourishment. Their names reflect the inspiration behind them; they aren’t a promise that one smoothie will detox your body or change your skin.

Our hydroponic wall is part of the menu.
We pick fresh greens and herbs for smoothies and seasonal teas, bringing the growing process into the café itself. Ask the team what’s ready that day and discover something fresh in your cup.
It’s a simple pleasure: seeing an ingredient growing, then tasting it moments later.

Our savoury dishes bring together ingredients such as eggs, beetroot, feta, rocket, peas, kohlrabi and wakame. There’s also a High-Protein Yoghurt Bowl and warming Turmeric Ginger Bone Broth.
We’ve chosen The Estate Dairy for its commitment to quality and care, working with family-run farms in Somerset and Cheshire to source milk with a story we can trace. Its Greek-style yoghurt is cultured and strained for a beautifully thick, creamy texture — the perfect base for our nourishing bowls.
Dairy foods provide protein and calcium, making them useful ingredients within a varied diet. nhs.uk
